My wonderful wife Betty is celebrating a big birthday this Wednesday. That’s right: the big 29, again! It is such a pleasure to cook for her as she enjoys almost everything I will cook. Except calves liver and other organ meats! So we'll be having poached halibut with fresh grapes, confit of duck, medallions of veal in Morrocan sauce and finish with a cheese course. She loves Sancerre, red burgundy, Bordeaux and Sautuernes so that's what we'll drink. And no, we do not eat like this every night! $65 per person.
